Wonderful One Dish Wonder: Potato Herb Crusted Chicken

This crispy potato crusted chicken makes for a wonderful weeknight meal!

Potato Crust Chicken

Makes 4-5 servings

1 Tbsp Sea salt

1 tsp Freshly ground black pepper

1 Whole chicken, cleaned

1 ¼ cups Mayonnaise

3 Native tomatoes, slit crosswise

1 pack Salted potato chips

  1. Pat the chicken dry and rub salt and pepper on the chicken’s skin and cavities. Cover and let stand overnight in the chiller.
  2. Rub mayonnaise on the chicken’s skin and cavities. Cover and let stand for an hour in the chiller.
  3. Put the chicken and tomatoes in a roasting pan and bake in a preheated 320°F oven for 45 minutes or until golden brown.
  4. Remove the chicken from the oven and cover it with potato chips, pressing the potato chips on the chicken.
  5. Put the chicken back in the oven and bake until the potato chips are golden brown in color.
