Wellness Wednesdays: Italian Tomato and Bread Salad

When love is the air, then delicious Italian food to share should be on the table



(Tomato and Bread Salad)

Makes 7-8 servings

6 cups Cubed rye bread

7 Ripe tomatoes, sliced

1 Red onion, sliced

1/2 Cucumber, sliced to

2 stalks Celery, tough stem removed, sliced

1/2 cup Fresh basil leaves, shredded


1/3 -1/2 cup Olive oil

3 Tbsps Balsamic vinegar

* Salt and pepper, to season

7 cups Chopped romaine lettuce

  1. Put cubed bread in the salad bowl and sprinkle lightly with cold water to moisten. Add the vegetables.
  2. In a separate mixing bowl, mix the olive oil and balsamic vinegar and season with salt and pepper.
  3. Drizzle the dressing over the bread mixture and leave for a few minutes to allow the bread to absorb the dressing. Serve on a bed chopped romaine lettuce.
