Visayan Pork Humba

Similar to adobo, this humba recipe features dried banana blossoms, tausi, and a thick, sweet sauce.
  • 1 kg Pork liempo
  • 1 Head garlic, crushed
  • 2 Red onions
  • 1 cup Water
  • 1 cup Clear softdrink
  • 2 tbsps Atsuete paste (1:2 ratio of water to annatto powder)
  • 2 tbsps Black beans in brine
  • 2 tbsps Brown sugar
  • 2 pcs Bay leaf
  • 2 pcs Star anise
  • 10-12 pcs Dried banana blossoms
  • 2-3 pcs Hard boiled eggs
  • ⅓ cup Vegetable oil
  • ¼ cup Soy sauce
  • ½ cup Vinegar
  1. Fry pork in oil until brown in color. Remove and set aside.
  2. In the same pan, fry garlic until golden brown. Add onions and sauté briefly. Add pork and sauté for 1 minute. Add vinegar, soy sauce, and clear softdrink. Bring to a boil.
  3. Reduce heat and add atsuete paste, black beans, brown sugar, banana blossoms, star anise, and bay leaves. Cover and simmer for 1½ to 2 hours or until the pork is tender.
  4. Season with black pepper and garnish with hard boiled eggs.
