Why not try this rich and tasty noodle soup that’s not just easy-to-prepare, but will surely satisfy your breakfast craving. Originally from Vigan, locals would slurp this noodle soup in the morning hours before they scurry off to do their daily routines. This flavorful noodle dish will surely hit the spot especially for those looking to indulge in something hot, filling, and delicious.

VIGAN MIKI
Makes 2-3 servings

1 Tbsp Cooking oil
1 Red onion, chopped
1 head Garlic, chopped
½ cup Boiled and shredded chicken breast
½ cup Boiled pork, cut into strips
3 Tbsps Fish sauce (patis)
3-4 cups Chicken stock
1 tsp Atsuete oil* or ¼ tsp annatto powder
Salt and ground black pepper, to season
3 cups Fresh or dried miki noodles
½ tsp Chopped spring onions
1 Hard-boiled egg, quartered
Chili powder (optional)

  1. In a casserole, heat cooking oil then sauté onion and garlic.
  2. Add chicken breast, pork strips, and fish sauce then sauté for two minutes.
  3. Add chicken stock and atsuete oil or annatto powder then let soup come to a boil. Season with salt and ground black pepper.
  4. Add just enough miki noodles depending on how thick or thin you want the soup to be. Simmer until noodles are tender.
  5. Divide the miki noodles into individual bowls then ladle some of the soup and meat. Garnish with spring onions and hard-boiled egg. Serve with chili powder on the side.

*NOTE: Heat 1 Tbsp vegetable oil with 2 tsps annatto seeds until oil turns orange. Strain out seeds.
