Vegetarian Sloppy Joe Recipe

Kids in the US can’t get enough of this cafeteria staple that’s made with a delicious filling consisted of ground beef, onions, tomato sauce, and ketchup. For our version however, we decided to forego the typical ground meat base and make it into an appetizing vegetarian option made of protein-rich tofu and nutritious veggies. Promise! This guiltless Sloppy Joe is incredibly delicious and totally perfect for those who want to indulge!

 

 

VEGETARIAN SLOPPY JOE

Makes 6 servings

 

2 blocks Firm tofu

1/4 cup Canola oil

2 Tbsps Olive oil

2 (300g) blocks Firm tofu

1/2 cup Minced carrots

1/2 cup Chopped green bell pepper

1/3 cup Minced celery

1/2 cup Chopped onion

2 tsps Chopped garlic

1 (400g) can Diced tomatoes with juice

1 ½ tsps Tomato paste

1 cup Vegetable broth

2 Tbsps Soy sauce

2 tsps Coconut sugar

1/2 tsp Italian seasoning

1/4 tsp Thyme

Salt and black pepper, to season

6 Hamburger buns

 

  1. Place the blocks of tofu between two dinner plates.   Put a heavy pot or book on top of the plate to extract the water from the tofu for about 20 minutes. Drain the excess water and crumble the tofu using your hands.
  2. Heat canola oil in a non-stick skillet. Pan-fry the tofu until golden and slightly crispy. Drain excess oil on top of a bowl using a strainer. Set aside.
  3. In a non-stick casserole, heat the olive oil. Sauté the carrots, green bell pepper, celery, onion, and garlic until tender.
  4. Add the diced tomatoes, tomato paste, broth, soy sauce, coconut sugar, Italian seasoning, and thyme. Mix well and simmer for 30 minutes.
  5. Stir in the crumbled tofu and simmer for a minute. Season with salt and pepper to taste.
  6. Divide the mixture into six portions and serve in hamburger buns.
