Twenty-Minute Meal: Shrimp Tempura Soba

Refresh with soba, the healthy Japanese noodle

Shrimp Tempura Soba

Makes 1 serving

1 (200g) pack Dried soba noodles

BROTH:

3 ½ cups Water

4 tsps Bonito flakes

3 tsps Dried dilis na dulong or ordinary dried dilis

3 tsps Mirin

3 tsps Japanese soy sauce

TOPPINGS:

4 Shrimp tempura

¼ cup Thinly-sliced onion leeks

  1. In a saucepot cook the soba noodles for 4-5 minutes in boiling water. When cooked, rub and rinse in running water. Set aside.
  2. In another saucepot combine the rest of the ingredients and bring to a boil for about 5-10 minutes. Strain through a cloth to have a clear, clean broth.
  3. Place broth and noodles in a bowl and top with tempura shrimps and onion leeks slices. Serve hot.
