Pinoy Adobo Flakes and Kesong Puti Bruschetta

2 cups Leftover chicken or pork adobo, shredded or flaked

2 cloves Garlic, finely minced

2 Tbsps Leftover adobo sauce

1 Tbsp Oil, for frying

4 pcs Choice bread, sliced and lightly toasted

Choice lettuce, torn into serving pieces

4 Tbsps Crumbled kesong puti, divided

4 Tbsps Balsamic vinegar reduction, as topping (optional)

  1. Bring a frying pan to medium high heat. Fry the shredded chicken or pork adobo in oil and leftover adobo sauce until crispy. In a small saucepan, reduce ½ cup of balsamic vinegar until thickened.
  2. To assemble, lay out the toasted slices of bread on a flat surface. Top with lettuce, crispy adobo flakes, crumbled kesong puti and balsamic vinegar reduction. Serve immediately.
