Honey Herb Goat Cheese Crostinis

Makes 12 crostinis

⅔ loaf Sourdough rye bread, cut into ½-inch thick slices then cut in half

1 clove Garlic, peeled

Salt, to season

1 log Fresh goat cheese or buche, chilled

*Extra virgin olive oil

2-3 Tbsps Honey

½ tsp Dried Italian herbs

1 tsp Pink peppercorns

*Freshly cracked black pepper, to season

1 bunch Fresh thyme leaves

  1. Preheat the oven or a toaster oven to 390°F.
  2. Rub the pieces of bread with the garlic clove. Brush bread lightly with some olive oil and sprinkle lightly with some salt. Grill bread in the oven for about 5-7 minutes until toasted and golden. Set aside.
  3. Slice the chilled goat cheese into twelve rounds using a wire cutter or a hot knife. Place the goat cheese on top of the garlic bread toast and drizzle with olive oil and honey.
  4. Finish with dried Italian herbs, cracked pink peppercorns, freshly cracked pepper, and fresh thyme.
