Throw yourself these snow balls

You don’t need to wait until Christmas to bless your sight with snow balls. These bite-sized desserts are filled with date and nut, a winning combination that makes these treats so irresistible. Even better, you can enjoy this dish during any occasion!

Date and Nut Snow Balls
Makes 12 servings


1 ¼ cups Raw cashews

¼ cup Pitted dates, soaked in hot water for 5 minutes then drained

¼ cup Unsweetened coconut flakes plus another ¼ cup for rolling

1 Tbsp Coconut oil

1 tsp Pure vanilla extract

¼ tsp Cinnamon

2 ½ Tbsps Coconut nectar


  1. Pulse the cashews in a food processor until finely chopped.
  2. Add the dates, ¼ cup coconut flakes, coconut oil, vanilla extract, cinnamon and coconut nectar, and process until it becomes a sticky paste, about 1-2 minutes.
  3. Scoop out 1 tablespoon of the mixture and roll into balls.
  4. Pour the remaining ¼ cup of coconut flakes into a dish. Roll the balls in the coconut flakes until evenly coated.
  5. Chill in the refrigerator for 30 minutes to firm them up a bit. Place the balls in a holiday-themed box or wrap them individually. Keep refrigerated.
