Three-Ingredient Treat: Chewy Caramel Pecan Turtles

You’ll have a hard time resisting these addictive, bite-sized treats!

Caramel Pecan Turtles

Makes 24-30 pieces

1 1/2 cups Prepared caramel fudge

1 tsp Vanilla extract

1/4 kilo Pecan nuts, halved lengthwise

1/2 kilo Chocolate block (milk chocolate or semi-sweet)

Equipment needed:

*Stainless steel or glass bowl

*Silpat or wax paper

*Cookie sheet or tray

  1. Pour caramel sauce into a medium saucepan and heat over low-medium heat.  Let simmer and stir continuously for 4-5 minutes.
  2. Add vanilla and pecan nuts.  Mix gently and continue to cook for 1-2 minutes more.  Turn off heat.
  3. Spoon pecan mixture in small mounds, leaving enough space between each mound.  Let cool in the refrigerator.
  4. Meanwhile, use a sharp knife to cut up chocolate block into small squares.  Put about half of the chocolate in a clean, stainless steel bowl.  Place this bowl over a pot of simmering water, making sure that no steam escapes from the sides.  As chocolate melts, add the rest of the chocolate then stir with a fork or whisk until it becomes smooth.  Remove from heat. 
  5. Remove from heat.  Take caramel mounds and drop into the bowl of melted chocolate, one at a time.  Use two forks to lift the coated caramel pecan mounds and transfer to another cookie sheet.  Repeat until all mounds are coated.  Let set in the refrigerator and store in an airtight container.
