Like Holmes and Watson, Wallace and Gromit, and The Doctor and his TARDIS, Fish and Chips is one of the most recognizable British duos capturing the hearts of many. And while the British classic isn’t so prevalent in our country, we go giddy over this crispy tandem whenever we can get our hands on them. Not every choice is on point though! UK-born-and-bred Chef Matthew Horsby-Bates realized this when he was craving for the dish he loved eating in jolly ol’ England. But instead of moping around, he decided to open his own fish and chips shop. And so, together with co-owner Chef Matthew Lim, the duo conceptualized CargoFish.

CargoFish brings more than just the traditional British idea of the fish-and-chip experience. Here, diners are given the freedom to make their own fish-starch combinations. Take a pick from a wide range of fresh fish fillets and scampi—all coated with a light beer batter and then fried until golden crisp. Then, choose your preferred sides and dip. To complete the meal, sprinkle a bit of Sarson’s Malted Vinegar, Britain’s go-to fish & chips condiment, to give you that nutty and citrusy flavor in every bite. The fish and chips come inside a meal box though you can trade it for the traditional paper-cone serving for a lighter snack.

Chef Matthew Lim also added his touches to the menu and concocted some sides and dips that perfectly suits the Filipino palate with-must-tries like the Cargo Rice and the Roasted Garlic Dip. Don’t forget to order a bottle or two from their cold beer selection. Even the obscure Beer na Beer makes a comeback to satiate your thirst.
