Chicken Teriyaki and Pineapple Skewers

½ cup Light soy sauce

¼ cup Mirin

2 Tbsps Sake

2 Tbsps Light brown sugar

1 Tbsp Sesame oil

3 tsps Grated fresh ginger

2 cloves Garlic, finely minced

Dash of pepper

500g Boneless chicken thigh fillet

5-6pcs Barbecue sticks

1 small can Pineapple chunks, drained

Sesame seeds, as topping

  1. Mix together the first 8 ingredients. Marinate the chicken pieces in the teriyaki mix for at least 30 minutes or overnight. When ready to cook, skewer into barbecue sticks and place pineapple chunks on both ends. Grill both sides on high heat for about 5-6 minutes or until cooked through.
