Easy potluck-perfect dish to bake and take to parties


Roasted Prawns with Chorizo

2 kilos (fresh, not frozen) Good quality prawns (prep by trimming off antennae and legs, and butterflying)

6 pcs Good chorizo de Bilbao (I like Terry’s but it’s so mahal so I get the one from Rustans which is about P 500 a pack)

1/2 cup Olive oil

2 heads Garlic, crushed 

1 cup Pitted black olives

1 cup Pitted green olives or olives stuffed with pimiento

1 tsp Good sea salt

1 tsp Ground peppercorns,basil or Italian parsley (or regular parsley if the other 2 are not available)

For garnish:

slices or wedges of lemon

  1. Place the prepared prawns on a baking dish that can serve as a serving dish too.
  2. Peel the chorizo (if it comes with casing) and coarsely chop.
  3. Heat the olive oil and add all the remaining ingredients except the garnish. The chorizo mixture can be prepped the day before.
  4. Top the prawns with the chorizo mixture and roast at 450F just until prawns are done. Do not overbake, or they will be rubbery. This should take 30 minutes depending on the size of the prawns.
  5. Top with bright green herbs and slices of lemon.
