Sweet Gems: Red Rubies (Tum Tim Krob)

Forget about ice cream. If you’re looking for a cool dessert, why not go for something closer to home? As precious as the gemstone, tum tim krob will have you seeing red without making your blood boil.

 

Red Rubies (Tum Tim Krob)

 

1 can Water chestnuts, drained

  • Liquid red food color

½ – 1 cup Tapioca flour

  • Boiling water
  • Strainer
  • Bowl of ice and water
  • Milk or coconut milk
  • Ice

 

  1. Drain water chestnuts. Cut them into small cubes according to preferred size, about 6 cubes per piece. Use only as much as you need.
  2. Transfer cubes to a bowl. Put drops of red food color and mix with a spoon until all pieces are coated. Leave for 5 minutes.
  3. Scoop tapioca flour in a bigger bowl. Drop red water chestnuts to the flour and stir with a fork until all pieces are well coated. Add more flour if necessary. Transfer to large strainer and gently shake to remove excess flour.
  4. Meanwhile, put a big pot of water to a boil. Drop coated water chestnuts in the water and let simmer.
  5. When pieces float on top, they are ready but it’s best to cook them for 2-3 more minutes. Scoop out with another strainer or spider.
  6. Plunge into a bowl of ice and water. Pour into a strainer and store in the refrigerator.
  7. To serve, pour milk in a bowl. Add ice and the red rubies. Serve immediately.
