Sweet Endings: Chocolate Turtle Cheesecake

They say happily-ever-after’s only exist in fairy tales. But with this chocolatey aphrodisiac, you’ll have a taste of the closest thing to a happy ending. The perfect dish to cap off a romantic meal!

 

Chocolate Turtle Cheesecake

 

Make 1 (7-inch) round cake

 

1 cup Chocolate cookie crumbs

3 ½ Tbsps Melted butter

1 ⅓ cup Cream cheese

½ cup Sugar

¼ cup Sour cream

2 tsps Flour

2 Eggs

2 Egg yolks

½ tsp Vanilla extract

100g Dark chocolate, chopped for topping

  • Pecan nuts, roasted and chopped for topping

 

  1. Combine chocolate cookie crumbs and butter in a bowl. Mix well and press into a springform pan lined with foil. Put in the chiller to set.
  2. Using the paddle attachment, cream the cheese in a mixer until smooth.
  3. Add sugar and continue mixing at low speed. Add sour cream, flour then eggs and egg yolks, one at a time beating well after each addition. Mix in vanilla extract.
  4. Pour over prepared crust. Set in a hot water bath or bain-marie and bake at 300°F for 40-60 minutes.
  5. Remove from oven and let cool to room temperature. Chill for 4 hours before serving.

 

CARAMEL SAUCE

2 ⅔ cups Water

½ cup Sugar

¼ cup Whipping cream

2 Tbsps Butter

1 ⅔ Tbsps Glucose

  • A dash of sea salt

 

In a saucepot, combine water and sugar, and cook until amber in color. Add cream, butter, and glucose. Cool completely and fold in sea salt.

 

TO ASSEMBLE:

  1. Unmold the cheesecake and put on a serving platter.
  2. Spread caramel sauce over the cake then drizzle with roasted pecan nuts and chopped dark chocolate.
