This chocolate and strawberries mousse cake is so divine!

From baker Gel Salonga’s favorite combination of chocolate and strawberries, she created a chocolate mousse with a bottom layer of dark chocolate cake, then generously topped that with sweet, plump strawberries. Her dream cake is one that is not lacking in strawberries because if it’s something she makes for herself or for loved ones, she will go all out on the ingredients she loves. While she only started baking three years ago, she remembers helping her mom bake during the Christmas season as a child—a memory she treasures as she helms Ted’s Kitchen in Laguna. It is the taste and smell of her mom’s chocolate roll that always brings her back to those happy childhood days in the kitchen.



Makes 1 (8-inch) cake



⅓ cup Unsweetened baking chocolate

½ cup Butter

1 cup Granulated sugar

2 Eggs

½ cup Sifted all-purpose flour

1. Combine the unsweetened chocolate and butter over simmering water (double boiler). Stir until the chocolate is melted and mixture is smooth. Remove from heat and allow to cool.

2. In a large mixing bowl, combine the chocolate mixture and sugar. Add the eggs one at a time, beating well after each addition. Stir in the flour until combined.

3. Pour the mixture in an 8-inch round cake pan lined with parchment paper and bake in a 350°F preheated oven for 20-25 minutes or until a toothpick inserted at the center comes out clean.

4. Allow the cake to cool in the pan. Carefully unmold the cake by running a metal spatula around the edges and inverting the cake on a wire rack.

5. Once the cake has cooled, place the cake inside an 8-inch removable bottom pan. Set aside.



1 cup Heavy cream

2 cups Semisweet chocolate chips

1 tsp Vanilla extract

2 cups Chilled heavy cream

¼ cup Granulated sugar

Fresh strawberries, sliced, to garnish

1. Combine heavy cream, semisweet chocolate chips, and vanilla extract in a bowl set over simmering water (double boiler). Stir until the chocolate is melted and mixture is smooth. Remove from heat and allow to cool completely.

2. In a large mixing bowl, beat two cups chilled cream with granulated sugar. Beat until cream doubles in volume and stiff peaks form.

3. Fold whipped cream into chocolate mixture until well-incorporated.


Line the sides of the pan with strawberry halves. Pour the mousse mixture into the cake-lined pan. Level the mousse with a spatula and chill overnight. Unmold the cake and top with fresh strawberries.
