Imagine your favorite Filipino grilled chicken in skewers

Makes 4-5 servings


¾ kilo Skinless and boneless chicken breast, sliced into 1-inch cubes

½ Tbsp Grated ginger

¼ tsp Cracked black peppercorns

Juice of 1 calamansi

2 Tbsps Coconut vinegar or white vinegar

¾ tsp Salt

½ Tbsp Annatto powder


  1. In a large bowl, combine the chicken with ginger, cracked black peppercorns, calamansi juice, vinegar, salt, and annatto powder. Mix well, cover, and marinate overnight in the refrigerator.
  2. Soak the wooden skewers in water for 20 minutes and set aside.
  3. Thread the chicken into the wooden skewers.
  4. Preheat the grill to high and brush with canola oil.
  5. Grill the chicken on both sides until fully cooked. Serve with sukang sinamak.
