Spur-of-the-Moment: Burrito Mason Jar Salad

When you’re at home craving for a burrito, you won’t even need to go to the nearest Mexican food joint to satisfy your hunger for their famous wrap. Instead, you can follow this recipe and give your burrito a mason jar makeover. It’s portable and delightful, but most especially, it’s healthy, now that it’s mixed with well-known salad ingredients.

 

Burrito Mason Jar Salad

 

Makes 4 servings

 

2 Tbsps Olive oil

¼ cup Red onion, chopped

¼ cup Green bell pepper, chopped

1 tsp Garlic chopped

2 tsps Ground cumin

2 tsps Chili powder

1 (425g) can Black beans, drained and rinsed

½ cup Whole kernel corn

2 cups Brown rice

¼ cup Cilantro, chopped

2 cups Iceberg lettuce, shredded

½ cup Tomatoes, deseeded and chopped

½ cup Greek yogurt or plain yogurt

1 Avocado, mashed

 

  1. Heat the olive oil in a non-stick skillet. Add the onion, green bell pepper, garlic, cumin, and chili powder. Sauté until the vegetables are soft and the spices are fragrant.
  2. Add the black beans and corn. Cook for a minute. Remove from the pan and set aside to cool.
  3. In a bowl, combine the brown rice and cilantro. Mix well.
  4. To assemble, place ½ cup of the cilantro rice in the bottom of a mason jar. Top with ½ cup of the black bean mixture followed by ½ cup of lettuce. Top with 2 tablespoons each of chopped tomatoes, Greek yogurt, and mashed avocado.
  5. Repeat the procedure to create three more Burrito Mason Jar Salads.
