A lot of recipes can root from the traditional salad. As a bistro original, this dish is as green as your usual salad, but more crispy with the chunks of bacon added to the mix. An alternative recipe for one of the most popular appetizers, this potato and green bean salad with bacon is sure to keep you hooked.


Potato and Green Bean Salad with Bacon
Makes 4-5 servings


300g Marble potatoes

2 cups Water

2 Tbsps Rock salt

100g French beans

10 strips Bacon, fried and chopped



1 Small shallot, finely chopped

1 Tbsp Dijon mustard

2 tsps Lemon juice

½ cup Sour cream

3 Tbsps Cream

½ tsp Sea salt

⅛ tsp Ground white pepper


  1. Boil the potatoes for 20 minutes or until tender. Drain and allow potatoes to cool. Cut in half and set aside.
  2. Bring a large pot of water with salt to a boil. Add the French beans and cook for two minutes. Remove the beans and place them in an ice water bath to stop the cooking process. Remove immediately then pat dry. Set aside.
  3. In a small bowl, prepare the dressing by combining the shallot, mustard, lemon juice, sour cream, and cream. Season with salt and pepper.
  4. To assemble, mix potatoes, French beans, bacon, and dressing together in a large bowl. Season with salt and pepper. Chill before serving.
