  • ½ kilo shrimp, peeled and deveined
  • Buttermilk dip
  • 1 cup milk
  • Juice of 1 calamansi
  • 1 egg, beaten
  • 1 tbsp yellow mustard
  • Cajun spice mix
  • ½ cup flour
  • ¼ cup cornstarch
  • ¼ cup finely ground tortilla chips
  • 2 tsps paprika
  • 1 tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp salt
  1. Prepare buttermilk. Combine milk and calamansi. Let sit for 10-15 minutes. Mix in beaten egg and mustard.
  2. Prepare spice mix. Combine flour, cornstarch, and ground tortilla chips. Add paprika, cayenne, garlic powder, and salt. Combine thoroughly.
  3. Heat cooking oil (oil should be 1 ½ to 2 in high). Dip each shrimp in buttermilk mixture then the spice mix. Deep fry until golden (1-2 minutes).
  4. Drain and serve.
