Spain in a Bowl: Sopa de Ajo con Chorizo (Spanish Garlic Soup with Chorizo)

Rumor has it that the sopa de ajo was created by Castilian shepherds, back when the cold nights spent out in the pasture forced them to find a way to stay warm. It’s the perfect recipe where they can use their stale bread while the hot chicken stock and paprika give them their much needed warmth. It’s amazing how a few humble ingredients can create a soup this comforting. For this recipe, we added chopped chorizo pieces making this soup more hearty and filling.

 

Sopa de Ajo con Chorizo (Spanish Garlic Soup with Chorizo)
Makes 4-6 servings

 

1 Day-old French bread, cubed

¼ cup + 2 Tbsps Extra virgin olive oil, divided

4 cloves Garlic, minced

¼ cup Chopped Spanish chorizo

1 tsp Smoked paprika

1 tsp Sweet paprika

6 cups Chicken broth

4 Large eggs

  • Salt and pepper, to season
  • Chopped parsley, to garnish

 

  1. Line a baking sheet with aluminum foil. Spread the cubed French bread and drizzle with two tablespoons olive oil. Gently stir to coat. Bake in a preheated 350°F oven until crispy and lightly golden, about 15-20 minutes.
  2. Heat the remaining olive oil in a large pot over medium heat. Add the garlic and cook until just golden, about 1-2 minutes. Add the chopped chorizo and cook until heated through. Add the smoked paprika and sweet paprika then cook for a minute more. Add the toasted bread cubes and toss to coat with the oil mixture.
  3. Pour in the chicken broth and stir. Bring to a boil then reduce heat. Season to taste with salt and pepper then simmer for 5-10 minutes.
  4. Crack one egg into a small bowl. With a spoon, make a depression on top of the soup (while still in the pot) and slowly slide one into the “hole.” Repeat with the rest of the eggs. Cover the pot and cook until desired doneness of the eggs is reached. Ladle soup into individual bowls and top with a poached egg and chopped parsley.
