Gingered Carrot Soup


2 Tbsps Olive oil 

1-inch Whole piece ginger, peeled and chopped

1 Tbsp Chopped garlic

1 Onion, chopped

1 kilo Carrots, peeled and cut into cubes

Water to cover

1 Chicken bouillon cube

1/4 tsp Salt

1/4 tsp Pepper

  1. In a saucepan, heat the olive oil. Add the ginger, garlic and onion and cook until fragrant.
  2. Add the carrots, enough water just to cover, the chicken cube, salt and pepper. Simmer until carrots are tender and cool completely. Process in a food processor or blender until smooth.
  3. Serve hot or cold, topped with yogurt and chopped fresh herbs.
