Colombian Egg and Milk Soup

Makes 4 servings

4 cups Milk

2 cups Water

3 stalks Leeks, chopped

*Salt and pepper, to season

4 Eggs

½ cup Chopped fresh cilantro, plus more for garnish

*Kesong puti, to taste

  1. Toasted white bread slices, edges removed if desired
  2. Combine the milk and water in a medium pot and bring to a boil.
  3. Add the leeks, salt, and pepper and cook for three minutes.
  4. Reduce the heat to medium and crack the eggs into the simmering liquid, without breaking them.
  5. Let the eggs cook gently in the hot milk for three minutes.
  6. Prepare deep soup bowls and line with slices of the toasted bread, cubes of kesong puti, and some chopped cilantro.
  7. Carefully ladle one cooked egg and the hot milk broth into the soup bowls. Sprinkle with more cilantro and serve.
