Soup of the Day: Chicken Galantina Soup

A box of recipes compiled by the family matriarch brings back dishes that comfort and cheer around the dinner table


Chicken Galantina Soup

Makes 2-3 servings

½ cup Butter

¼ cup Diced potatoes

¼ cup Diced carrots

¼ cup Diced celery

3-4 cups Chicken broth

*Leftover Chicken Galantina slices, diced

*1 poached egg, per serving

*Chopped spring onions, for garnish

  1. Melt butter in a sauté pot over medium heat. Sauté the diced vegetables in butter until cooked.
  2. Add chicken broth to the pot and bring to a simmer.
  3. Taste and adjust seasoning with salt & ground white pepper. Add diced Chicken Galantina. After five minutes, remove from heat.
  4. To serve, add poached egg to the soup. Garnish with spring onions.
