Oatmeal and Parmesan Crusted Lapu-Lapu

2 White fish fillet

2 tsps Lemon or calamansi juice

*Salt and ground white pepper, to season

*Dash of Spanish paprika

3 Tbsps Mayonnaise

*Canola oil for shallow frying


¼ cup Instant oatmeal

¼ cup Japanese breadcrumbs

¼ cup Grated Parmesan cheese

2 Tbsps Chopped parsley

  1. Rinse fish fillets and pat dry with paper towels. Squeeze lemon or calamansi juice on both sides of the fish. Season both sides with salt, pepper, and paprika. Set aside
  2. To make the coating, combine oatmeal, bread crumbs, cheese, and parsley in a bowl then transfer to a flat plate. Set aside.
  3. Spread mayonnaise on seasoned fish fillets and immediately dredge in the seasoned coating. Keep coated fish chilled in the refrigerator until ready to fry.
  4. When ready to cook, heat oil in frying pan over medium heat. When oil is hot, gently pan fry fish fillets, one at a time, until golden. Turn over to cook the other side. Repeat with the other fish.
  5. Transfer cooked fish to a paper towel-lined plate to drain excess oil. Serve with rice or mashed potatoes, and some Tartar Sauce on the side.

Tartar Sauce:

½ cup Mayonnaise

2-3 Tbsps Chopped onions

1 tsp Dijon mustard

1 Tbsp Pickle relish

1 Tbsp Capers, chopped

1 Hard boiled egg, chopped

*Salt and ground white pepper, to season

  1. Combine all ingredients in a bowl then season with salt and pepper. Mix well.
