Slurp Du Sur: Vigan Miki

Soothe your senses with this comforting noodle soup from Ilocos Sur. It gets its distinct flavor and texture from the miki noodles made especially in Vigan and its surrounding areas. Best eaten with a serving of Ilocos empanada.



Makes 2-3 servings


1 Tbsp Cooking oil

1 Red onion, chopped

1 head Garlic, chopped

½ cup Boiled and shredded chicken breast

½ cup Pork, boiled and cut into strips

3 Tbsps Fish sauce (patis)

3-4 cups Chicken stock

¼ tsp Annatto powder

3 cups Ilocos Sur Miki noodles

  • Salt and pepper, to season

½ tsp Chopped spring onions, to garnish

1 Hard-boiled egg, quartered

  • Chili powder (optional)


  1. In a casserole, saute onion and garlic in cooking oil.
  2. Add chicken breast, pork strips, and patis then saute for two minutes.
  3. Add chicken stock and annatto powder then let come to a boil.
  4. Add just enough miki noodles depending on how thick or soupy you want your soup to be. Simmer until tender. Season with salt and pepper.
  5. Divide the Vigan miki into individual bowls then garnish with spring onions and pieces of hard-boiled egg. Serve with chili powder on the side, if desired.
