Shrimping Up: Hot Shrimp and Fruit Salad

Who says salads have to be boring? For this recipe, we used brightly colored tropical fruits instead of the usual leafy greens making it look festive and fun to eat. We also opted not to scrimp on shrimps so you’ll be enjoy this crispy fried breaded seafood on your every bite.

 

Hot Shrimp and Fruit Salad

Makes 4 servings

 

MAYONNAISE

2 Egg yolks

1 tsp Chinese mustard

  • Salt and pepper

½ cup Vegetable oil

1 Calamansi, squeezed

 

SALAD

1 Cantaloupe melon (or watermelon)

1 can Fruit cocktail

1 Egg, beaten

8 pcs Suahe shrimp

400ml Oil for frying

1 cup Flour

4 Maraschino cherries

  • Salt and pepper

 

  1. In a mixer (or in a bowl with a whisk), mix together egg yolks, mustard, salt, and pepper. While mixing, slowly pour in oil to form a mayonnaise. Squeeze some calamansi and mix well. Set aside.
  2. Slice melon in half and keep half as the container. Slice the other half into small cubes.
  3. Mix the fruit cocktail and melon cubes together with 3 Tbsp of mayonnaise. Season with salt and pepper. Keep cool in refrigerator.
  4. In a wok, heat up the frying oil. Season shrimps and dredge them in flour. Dredge them in the beaten egg and then in the flour again.
  5. Fry shrimp in oil until golden brown. Season with salt and pepper.
  6. Assemble salad by placing the fruit mixture into the melon half then top with the fried shrimp.
