Setting the Bar: Nanaimo Bars Recipe

Named after a city in British Columbia, nanaimo bars are super easy to make. A no-bake dessert, these treats are chocolatey and creamy enough to hook you for more. It has over a hundred variations, and here’s one to give you a taste of one of Canada’s favorite desserts.


Nanaimo Bars
Makes 12 bars



½ cup Unsalted butter, plus more for greasing

3 Tbsps White sugar

3 Tbsps Brown sugar

1 Large egg

¼ cup Cocoa powder

1 tsp Vanilla powder

1 ½ cups Crushed graham



½ cup Butter, room temperature

2 Tbsps Heavy cream

3 Tbsps Vanilla cream custard powder

2 cups Confectioners’ sugar



75g Dark chocolate, chopped

1 Tbsp Butter, softened


  1. Grease a 9×9” pan. Set aside.
  2. Make bottom layer: In a saucepan, melt butter over low heat. Remove from heat then add the sugars and whisk until mixture cools down. Transfer to a mixing bowl.
  3. Add egg to the cooled butter-sugar mixture and whisk until well-incorporated. Cook over low heat and whisk until mixture thickens.
  4. Add vanilla powder and crushed grahams then mix. Put in the pan and press firmly.
  5. Make the middle layer: Cream butter, cream, custard powder, and confectioners’ sugar until smooth. If the mixture is too thick to spread, add more cream. Spread evenly over the bottom layer.
  6. Make top layer: In a heat proof bowl over simmering water, melt chocolate and butter. Spread the melted chocolate mixture evenly over the middle layer. Refrigerate until the chocolate sets. Cut into squares before serving.
