Melted springy cheese goodness

Makes 4-5 servings


¼ cup Salted butter

2 Tbsps Extra virgin olive oil

2 cloves Garlic, finely minced

½ tsp Italian seasoning

Freshly ground black pepper, to season

2 Tbsps Grated Parmesan cheese

1 Large crusty loaf

1 cup Shredded mozzarella cheese

1 Tbsp Fresh parsley, finely chopped


  1. In a small, microwaveable bowl, combine the butter, olive oil, garlic, Italian seasoning, and ground black pepper.
  2. Using the microwave’s defrost setting, heat the bowl at 30-second intervals until the butter has completely melted. Mix in the Parmesan cheese and set aside.
  3. Place the bread on top of a baking pan loosely lined with foil. Using a bread knife, score bread diagonally in 1-inch increments, and carefully fill in the cracks with the seasoned butter mixture and shredded mozzarella cheese.
  4. Loosely wrap with the foil and bake in a preheated 350°F oven for 13-15 minutes, until the cheese is melted. Unwrap the top and bake for another 5-8 minutes, until the top is nicely toasted. Top with fresh parsley before serving.
