Savoury Spanish Omelette with Chorizo

Tortilla De Chorizo

2 Tbsps  Cooking oil

2 Tbsps Chopped onions

2 Tbsps Chopped red or green bell pepeprs

1 Chorizo, chopped

1 cup Diced potatoes

5 Whole eggs, beaten

  1. In a saucepan, heat cooking oil over low heat.  Toss in onions and saute until soft and fragrant.
  2. Next, add peppers and cook for about a minute. 
  3. Toss in chorizo and cook until fat has rendered.  Remove from heat and set aside.
  4. In a bowl, combine the beaten eggs, sautéed onions and bell peppers, chorizo and potatoes.
  5. Pour the mixture into a small, non-stick oven-safe pan and cook over low heat.  When the bottom side turns brown, use a long spatula to flip it over to cook the other side. 
  6. If necessary, finish cooking tortilla in a preheated 175C oven for about 10 minutes. Serve warm.
