Sausage and Bean Casserole

One pot dishes are so incredibly satisfying since the cooking is only done in one vessel! This Sausage and Bean Casserole is a perfect example of a one pot dish where you don’t need to do so much—just prepare the ingredients, cook them accordingly, and let the flavors meld together. For this specific recipe however, it’s a must to use Spanish sweet paprika to bring out the flavors of this recipe.

 

SAUSAGE AND BEAN CASSEROLE

Makes 4-5 servings

 

½ cup Smoked bacon, sliced

5 Spanish Chorizo, sliced into thick chunks

1 Large onion, chopped

5 cloves Garlic, chopped

2 cups Chopped tomatoes

1/4 cup Tomato paste

2 Potatoes, peeled and diced

2 cups Chicken stock

2 cans White kidney beans, drained

1 Tbsp Spanish sweet paprika

1 Bay leaf

Salt and ground black pepper, to season

  1. In a heavy saucepot over medium heat, cook bacon until brown and crisp, about 7-8 minutes. Remove from the pan and set aside.
  2. In the bacon fat, sauté the Spanish chorizo pieces until golden. Remove from the pan and set aside.
  3. To the bacon fat, sauté onions and garlic and cook over low heat until soft and fragrant, about five minutes. Next, add tomatoes and cook for ten minutes more until tomatoes are mushy.
  4. Stir in tomato paste and cook until paste changes color. Add potatoes and coat with the tomato mixture.
  5. Pour in chicken stock and white beans. Season with paprika, bay leaf, salt, and black pepper.
  6. Lastly, add the cooked chorizo. Bring to a boil then reduce to low heat and simmer for 45 minutes to an hour, stirring occasionally. Taste and adjust seasoning. Transfer to a casserole and top with crumbled bacon.
