A fried rice meal that’s a complete breakfast on it’s own!

Wake up to a great start by cooking an incredible breakfast spread for you and your loved ones. Starting with this delicious stir-fried rice laden with all kinds of breakfast favorites: salted eggs, tomatoes, and Spanish-style sardines. It’s a whole meal in itself though you can pair it with other morning staples like cured meats such as beef tapa, longganisa, and corned beef.

 

SARDINES STIR-FRIED RICE

Makes 5-6 servings

 

1 bottle Sardines in olive oil

3 cloves Garlic, chopped

3 Tbsps Chopped onions

6 cups Cooked riceSalt and pepper, to season

2 Tbsps Chopped chives

2 Salted eggs, quartered

2-3 Native tomatoes, quartered

  1. Heat a few teaspoons of oil from the bottled sardines in a frying pan. Sauté garlic and onions until fragrant.
  2. Mash 2-3 pieces of sardines then add to the sauté together with a few more teaspoons of oil.
  3. Add the cooked rice and sauté for two minutes until all the rice is evenly coated. Season with salt and pepper to taste. Finally, sprinkle with chopped chives.
  4. Transfer the sardine stir-fried rice to a serving dish. Garnish with the rest of the sardines, slices of salted egg, and fresh tomatoes.
