Cool down with a Salpicon, Colombia’s favorite fruity refresher

One of the best ways to cool down in Colombia is with a tall glass of salpicon de frutas. This refreshing fruit cocktail is traditionally made with sparkling watermelon soda called Colombiana or as a healthier substitute, fresh watermelon juice for that extra boost of fruit flavor. Top it up with a scoop of vanilla ice cream and you’ve got a spectacular South American refreshment.

Makes 6-8 servings

6 cups Assorted fresh fruits (you may use sliced bite-size bits of pineapple, papaya, watermelon, mango, apple, banana, and seedless red grapes)

4 cups Fresh watermelon juice*

Vanilla ice cream

  1. Scoop fruits into a tall glass. Pour chilled watermelon juice over the mixed fruits. Keep chilled until ready to serve.
  2. Top glass with a scoop of vanilla ice cream just before serving.

*To make fresh watermelon juice, slice a watermelon into pieces and remove seeds. Put the pieces in blender with ice and a little sugar.
