Salad Days: Wilted Lettuce Salad Recipe

When it comes to salads, fresh, just spun-dry greens are always in mind. But did you know that you can do the complete opposite and have your lettuce grilled to build on having a smoke-y taste? Not only will it make a difference in taste but it’ll also bring something unexpected for your guests. Spruce it up with light-flavored dressings and simple add-ons to highlight your wilted greens. This different kind of salad is sure to leave you feeling more refreshed and healthy.


Wilted Lettuce Salad
Makes 3-4 servings



3 Tbsps Olive oil

½ cup Plain yogurt

1 tsp Garlic powder or finely chopped fresh garlic

1 tsp Finely grated lemon zest

1 Tbsp Lemon juice

  • Salt and pepper, to season

2-3 heads Romaine lettuce, chilled and halved lengthwise


  1. In a small bowl, stir together olive oil, yogurt, garlic powder or fresh garlic, lemon zest, and lemon juice. Season lightly with salt and generously with pepper.
  2. Preheat grill pan to medium high then brush lightly with olive oil.
  3. Place lettuce halves on grill and cook until lightly charred, about 2-3 minutes. Remove lettuce to serving platter.
  4. Drizzle lettuce with yogurt dressing and serve immediately. Enjoy the contrast of chilled and warm lettuce with a variety of toppings.
