Sacré bleu! You have to cook this chicken and blue cheese pasta!

Dreaming of a creamy and bold-flavored meal? Then this easy-to-make dish is for you. Made with the goodness and pungency of blue cheese, this dreamy pasta can be savored for lunch or as a heavy merienda option. Pair it with a nice white wine plus a side green salad.


Creamy Chicken and Blue Cheese Fettucine

Makes 2-3 servings


250g Fettucine pasta, uncooked

½ cup Pasta water

1 Tbsp Olive oil

2 Tbsps Butter

1 Small onion, minced

10-12 Whole mushrooms, sliced

2-3 Tbsps Blue cheese

1 cup Cooking cream

1 cup Diced store-bought roasted chicken

Salt and ground white pepper, to season

Toasted pine nuts, for topping

Chopped parsley, for garnish

  1. Cook the pasta in boiling water with salt until al dente. Drain the noodles and reserve some of the pasta water. Set both aside.
  2. In a non-stick sauté pan, melt the butter in olive oil over low-medium heat. Sauté onions until soft.
  3. Add the sliced mushrooms and cook for a minute.
  4. Stir in the blue cheese and crush it with the back of a spoon. Pour the heavy cream and stir to make a smooth sauce. Add some pasta water if you prefer a thinner sauce.
  5. Add the diced store-bought roasted chicken and season with salt and pepper to taste.
  6. Mix in the cooked fettuccine to the blue cheese sauce and toss gently.
  7. Remove pan from the heat and transfer contents to a serving platter. Top the pasta with pine nuts and chopped parsley before serving.
