Saba and red bean bingsu

Aside from our own halo-halo, one of the most recognizable Asian iced desserts is probably the Korean bingsu. With its fine ice that instantly melts in your tongue once it touches the warmth inside your mouth. For this recipe, we combined the goodness of both Filipino and Korean iced desserts.

 

SABA AND RED BEAN BINGSU

 

 

1 cup Water

1 cup Sugar

2-3 pcs Saba bananas, peeled and sliced into small dice

*Red Bean Paste (Adzuki Beans from any Korean Grocery)

*Shaved Ice

*condensed milk

*pinipig

 

Procedure:

  1. In a saucepot, melt 1 cup of sugar in 1 cup of water and stir.  Bring to a boil to make a syrup.  Add chopped up saba bananas and cook until soft, stirring constantly. Let cool.
  2. In a blender, puree half of the cooked saba, and mix it back in with the chopped up pieces to make a chunky banana sauce.
  3. To Assemble:  Put some shaved ice in a serving bowl or glass.  Top with banana sauce and some red bean paste.  Drizzle with condense milk and top with toasted pinipig. Serve immediately.
