Roller Foster Ride: Bananas Foster Flambée

Bananas Foster is a popular dessert in New Orleans. Aside from its taste, it also has an entertainment appeal as this dessert’s preparation serves as a tableside performance. Who wouldn’t get amused with the sweet smell of butter and sugar coupled with the flambeing (alcohol is added to the hot pan to produce bursting flames) the bananas that serves as the final act of the show.


Bananas Foster

Makes 3 servings


3 Tbsps Butter

2 Tbsps Brown sugar

2 tsps Ground cinnamon

1 tsp Banana essence

  • Vanilla ice cream

2 Tbsps Rum

4 Ripe Cavendish bananas, sliced in the middle lengthwise


  1. Combine butter, brown sugar, and cinnamon on a skillet over low heat. Cook until brown sugar is dissolved. Stir in the banana essence.
  2. Add the bananas and spoon sauce over the bananas. Tip the pan then carefully add the rum. Allow the mixture to ignite until the alcohol is burned off.
  3. When the flame subsides, remove from the heat then divide the banana slices into individual bowls or plates, reserving the sauce. Top each serving with a scoop of vanilla ice cream then drizzle with the butter-cinnamon sauce. Serve immediately.
