Rice Cooker Wonder

Satisfy your Japanese craving with this one pot wonder!

 

KAMAMESHI RICE

Recipe by Marie Villanueva Pascual

Makes 5 servings

 

3 Tbsps Vegetable oil

¼ cup Minced white onion

10-12 pcs Dried shiitake mushrooms, hydrated, stems removed and sliced into strips, liquid reserved

½ cup Canned button mushrooms, sliced

2 cups Diced chicken thigh fillets

2 ½ cups Japanese rice, washed

½ cup Diced carrots

½ cup Frozen green peas

Seasoning sauce:

2 Tbsps Japanese soy sauce

2 Tbsps Mirin (gin may be used as a substitute)

1 Tbsp Brown sugar

½ – ¾  Tbsp Sea salt

 

Procedure:

  1. Put rice cooker steel pot on the stove over medium heat. Sauté onions in vegetable oil until translucent.
  2. Add rehydrated mushroom strips, sliced button mushrooms, and diced chicken. Continue to stir-fry for about 3-5 minutes.
  3. Add the Japanese rice and toss until fully mixed. Turn off stove.
  4. In a bowl, combine Japanese soy sauce, mirin or gin, sugar, and salt. Transfer pot to rice cooker and add the mushroom liquids, soy sauce-mirin mixture, carrots and green peas. Stir well. Put cover on and turn on rice cooker to cook.
  5. Once cooked, scoop Kamameshi Rice in serving bowls and generously top with thin strips of nori.
