Make an Amazing Japanese Kamameshi Rice with just your Rice Cooker!

This flavorful Japanese rice dish can be a complete meal on its own since it has so many ingredients to make it stand out on its own like the chicken thigh pieces, mushrooms slivers, and vegetables bits. Pair it with homemade tempura, pork tonkatsu, or even fried chicken!


Makes 5 servings

3 Tbsps Vegetable oil
¼ cup Minced white onion
10-12 pcs Dried shiitake mushrooms, hydrated, stems removed and sliced into strips, liquid reserved
½ cup Canned button mushrooms, sliced
2 cups Diced chicken thigh fillets
2 ½ cups Japanese rice, washed
½ cup Diced carrots
½ cup Frozen green peas

2 Tbsps Japanese soy sauce
2 Tbsps Mirin (gin may be used as a substitute)
1 Tbsp Brown sugar
½ – ¾  Tbsp Sea salt

  1. Put rice cooker steel pot on the stove over medium heat. Sauté onions in vegetable oil until translucent.
  2. Add re-hydrated mushroom strips, sliced button mushrooms, and diced chicken. Continue to stir-fry for about 3-5 minutes.
  3. Add the Japanese rice and toss until fully mixed. Turn off stove.
  4. In a bowl, combine Japanese soy sauce, mirin or gin, sugar, and salt. Transfer pot to rice cooker and add the mushroom liquid, soy sauce-mirin mixture, carrots, and green peas. Stir well. Put cover on and turn on rice cooker to cook.
  5. When rice is cooked, scoop into serving bowls and generously top with thin strips of nori.
