Seeing Red: Refreshing Summer Red

Bell pepper juice? Seems like weird concept, but it actually serves to sweeten up the whole drink. Red bell peppers are primarily composed of carbs which are mostly sugars, such as glucose and fructose, resulting in the sweet taste of ripe bell peppers.




Makes 1 glass


½ Medium-sized watermelon, rind removed

8 Medium-sized organic carrots, washed and unpeeled (more if carrots are small)

1 organic red sugar beets, washed and unpeeled

1 Lemon, peeled and deseeded

4 Medium-sized tomatoes, washed

1 Medium-sized organic red bell pepper, washed and deseeded

2 Medium-sized Fuji apples washed well, peeled and cored


Cut fruits and vegetables into small pieces and juice using a slow juicer. Serve immediately or store in an airtight container so it lasts up to 48 hours (no more than that!).
