Hailing from Thailand, the mango sticky rice offers the combination of sweet fresh ripe mangoes and creamy coconut milk. For those who are watching their sugar and carbs intake yet still want to enjoy this treat, this recipe is perfect for you. Loaded with fiber and omega-3 fatty acids, the Chia Pudding with Mango is way healthier and lighter than the mango sticky rice because we substituted some of the latter’s traditional ingredients with something more nutritious.


Chia Pudding with Mango

Makes 2 servings


½ cup Coconut milk

½ cup Unsweetened soy milk

3 Tbsps Honey

¼ cups Chia seeds

1 Ripe mango, peeled and diced

2 Tbsps Pinipig


  1. Pour the coconut milk, soy milk, honey, and chia seeds into a mason jar. Screw the cap on and shake it.
  2. Allow the seeds to soak overnight or for at least 2 hours in the refrigerator. Just before serving, top with diced mangoes and pinipig.
