No one’s going to stop you from indulging in these junk food. A serving of these will make you forget about your diet, but they sure are worth the calories. Perfect for any occasion, these fried potatoes are guaranteed to become your next favorite guilty pleasure.


Potato Chips and The Perfect French Fries
Makes 2-3 servings



2 pcs (about ½ kilo) Large starchy potatoes, washed and scrubbed, skin- on, sliced into ⅛” thickness

1 liter Vegetable oil for frying

  • Iodized salt


  1. In a heavy bottomed saucepot, preheat oil over medium to high heat. Add the potato slices one at a time to fry.
  2. Stir the potatoes in the oil as it fries for about 3-4 minutes or until golden brown and crisp.
  3. Remove with a strainer, allowing the excess oil to drip in a large bowl lined with paper towels.
  4. When all the chips have finished frying, sprinkle salt and shake the bowl to evenly distribute the salt. Remove the paper towels and serve with your favorite dip.



1 kilo Starchy potatoes, cut into sticks

1 liter Vegetable oil for frying

  • Salt


  1. Place the potatoes in a large bowl with iced water, and soak for 2 to 3 hours or overnight in the refrigerator. Drain the water and lay the potatoes on baking sheets and dry off with paper towels.
  2. In a heavy bottom pot, heat oil over medium to high heat. Fry the potatoes in batches until golden, about 4 to 5 minutes per batch. Do not brown. Drain on paper towels.
  3. Once all have been fried, turn up the heat until the oil reaches 400˚F. When the oil is hot, refry the potatoes, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels. Sprinkle with salt and serve with your favorite dip.
