Pop In, Pop Out: Apple Cherry Cobbler Recipe

apple cherry cobbler

Have you heard about cobblers—aka pie fillings without the bottom crust? They usually come in single fruit varieties, but for this recipe, we’re combining two: apple and cherry! Popping with a delicious red filling, this dish is twice as appealing as your ordinary bowl of cobbler!

Apple Cherry Cobbler
Makes 5-6 servings

6 Granny Smith or green apples, peeled, cored, and cut into ½” cubes

1 can Cherry or blueberry pie filling

⅓ cup White sugar

½ tsp Vanilla extract

¼ tsp Ground cinnamon

Mix all ingredients in a bowl. Put in a baking dish or individual ramekins.

½ cup All-purpose flour

¼ tsp Baking powder

½ cup Sugar

½ cup Butter, softened

1 Medium egg

¼ tsp Vanilla

  1. Preheat oven to 375˚F. Sift dry ingredients together. Add the butter, egg, and vanilla extract then whisk vigorously until fully incorporated.
  2. Drop thick batter by the spoonful over the fruit filling. To create a rustic look, leave some gaps in between.
  3. Put in the oven and bake for 25-30 minutes until topping is golden. Serve warm or cold, with vanilla ice cream or whipped cream on the side.
