Grilled pork can form a perfect combination with a variety of sauces and side dishes. Here comes another candidate to become its partner, a juicy fruit (yes, tomato is a fruit!) that brings so many health benefits to the table. Whether it’s in a picnic at a park or inside your home, you can enjoy a plate of grilled pork and tomatoes and not regret mixing things up a little.


Grilled Pork and Tomatoes

Makes 5-6 servings


1 kilo Pork belly slices (liempo)

3 Tbsps Vinegar

4 Garlic cloves, minced

  • Salt and ground black pepper

¼ cup Olive oil

5 Tbsps Balsamic vinegar

3 Tomatoes, cut in wedges and grilled

3 Whole onions, cut into wedges and grilled

5 Tbsps Cilantro, chopped


  1. Rinse and dry the pork liempo slices with paper towels.
  2. In a medium bowl, mix vinegar, garlic, salt, and pepper. Marinate the liempo for about an hour.
  3. Prepare the charcoal grill. Grill the pork belly until cooked through, turning once. When done, transfer to a chopping board and slice into thin strips.
  4. In a medium bowl, mix olive oil and balsamic vinegar. Season with salt and freshly ground black pepper. Toss in grilled pork belly slices, tomato wedges, and grilled onions. Sprinkle with chopped cilantro just before serving.
