Pinoy Breakfast Tuesdays: Potato and Longganisa Hash

A quick, simple, and garlicky recipe great for breakfast!


Potato and Longganisa Hash

Makes 3-4 servings

2-3 Potatoes, quartered with peel on

1 dozen Vigan longganisa

1 clove Garlic, minced

1 large Onion, diced

2 Large eggs

2 Tbsps Olive oil

*Salt and pepper, to season

1 tsp Chopped fresh parsley

  1. Clean the potatoes under cool running water. Boil in a saucepan with lightly salted water just until tender. Drain and set aside.
  2. In an ovenproof frying pan over medium heat, place the longganisa with two tablespoons of water and cover to steam for 2-3 minutes. Remove cover and continue cooking until most of the liquid has evaporated. Add two tablespoons of olive oil and prick each piece with a fork, letting the fat ooze out. Roughly crumble with a knife and continue cooking until crisp. Remove from pan and set aside. 
  3. In the same pan, fry the garlic and onion until fragrant. Add the cooked longganisa bits and potatoes and stir to mix. Fry for five minutes, then crack the eggs on top.
  4. Transfer pan into a preheated 350°F oven and bake for 8-10 minutes, or until the egg whites are set but the yolk is still runny.
  5. Sprinkle with sea salt, freshly ground black pepper and chopped parsley before serving.
