Pie in the Sky: Chicken Cobbler Recipe

Some might be wondering: what’s the difference between a pie and a cobbler? Even though both of them are popular American dishes that you can easily serve to a crowd, the cobbler does not require a pastry base, unlike a pie. Here’s a cobbler version of chicken pot pie, with a crispier and crumblier top.


Chicken Cobbler
Makes 5-6 servings


1 Tbsp Vegetable oil

1 Medium onion, diced

½ cup Sliced leeks

2 cups Chicken fillet, 1” dice (approximately ½ kilo)

½ cup Sliced mushrooms

½ cup Potatoes, cut into ½” cubes

½ cup Carrots, cut into ½” cubes

½ cup Frozen green peas

½ cup Water

  • Flour slurry (2 Tbsps flour + ½ cup water)

1 tetra pack All-purpose cream

  • Salt and pepper, to taste


  1. In a saucepan, heat oil over medium heat. Sauté onions and leeks until soft. Add chicken and cook until meat turns white. Add all vegetables and water. Lower heat to simmer and cover. Cook until vegetables are done.
  2. Add flour slurry and stir until mixture thickens. Add cream and mix well. Season with salt and pepper. Transfer to a baking dish and set aside.



2 cups All-purpose flour

3 tsps Baking powder

1 tsp Salt

1 can Cream (mix 1 cup cream + 1 Tbsp vinegar, set aside for 10-15 minutes)

½ cup Melted butter

¼ cup Grated cheese or bacon bits (optional)


  1. Preheat oven to 375˚F. Sift dry ingredients and mix well. Add cream-vinegar mixture and melted butter. Mix with a wooden spoon until mixture can be gathered to form a ball. Do not over handle dough.
  2. With a rolling pin, roll dough on a lightly floured board and flatten until about 1” thick. Cut to make rounds using a cookie cutter or rim of a glass.
  3. Arrange biscuits on top of chicken mixture in the baking dish and immediately put in the oven. Bake the biscuits to a perfect, flaky finish, about 25-30 minutes.
