Baking novices and peanut butter fans will love this modern spin on a classic trifle.
Ingredients
Peanut crumble
  • 50g Unsalted butter
  • 50g Peanuts
  • 50g White sugar
  • 50g All purpose flour
Brownie chunks
  • 2 cups store-bought or brownies from your favorite mix
For the peanut butter pudding
  • ⅓ cup White sugar
  • 1⅔ tbsp Cornstarch
  • 2 cups Whole milk
  • ½ cup Heavy cream
  • ¾ cup Peanut butter
  • 1 tsp Vanilla extract
  • 1 Egg yolk
  • Pinch of Salt
For assembly
  • Jelly or jam of choice (as needed)
  • Whipped cream (as needed)
Procedure
For the peanut crumble
  1. Preheat an oven to 350F.
  2. Combine all ingredients in a Moulinex Food Processor FP2111 and pulse until a sandy mass forms, about 1-2 minutes.
  3. Turn contents out into a sheet pan lined with baking paper or a silicone-baking mat and bake at 350F.
  4. Toss the mixture using a spatula or a spoon to make sure it browns evenly. Bake until crispy and golden brown.
  5. Allow to cool at room temperature until ready to assemble.
For the brownie chunks
  1. Use your favorite store-bought brownie or brownie mixture. For the latter, bake according to package directions. To add additional flavor and crunch, garnish the top of the brownie before baking with additional peanuts ground into chunks using the Moulinex Food Processor FP2111. Allow to cool then cut into 1⁄2 inch cubes. Reserve until ready to assemble.
For the peanut butter pudding
  1. Using the Moulinex Food Processor FP2111, combine the white sugar, cornstarch, egg yolk, cream, salt, vanilla and peanut butter until there are no more lumps and the mixture is smooth. Transfer to a heat proof bowl.
  2. Add peanut butter mixture in the saucepan with the milk. Bring this mixture to a boil whilst whisking constantly. The mixture should start to thicken as it comes up to a boil.
  3. Once the mixture has thickened, transfer to a heat-proof bowl and cover with plastic wrap,
  4. allowing the plastic to touch the surface of the pudding. This will prevent a skin from forming as it cools. Let cool.
For assembly
  1. In a mason jar or similar glassware, layer the peanut pudding, brownies, your jelly or jam of choice, and the peanut crumble until the layers touch the rim. Top with whipped cream. Repeat until you have filled 4 to 5 glasses.
  2. Allow to cool in the refrigerator for 30 minutes before serving.
