Making a wicked bolognese sauce is something everyone should know how to do. This pasta bolognese recipe will show you the ropes.
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • ½ cup white onion, diced
  • 1 tbsp garlic, minced
  • ½ stalk celery, finely diced
  • ½ cup carrots, finely diced
  • ⅛ kg ground beef
  • ⅛ kg ground pork
  • Salt and pepper
  • ½ cup whole milk
  • ½ tsp ground nutmeg
  • ½ cup red wine
  • 1½ cups canned crushed tomatoes with juices
  • 1 tbsp white sugar
  • 1 bay leaf
  • 250g pasta
  1. Heat oil and butter. Sauté onion until translucent. Add garlic and sauté until fragrant.
  2. Add celery and carrots. Cook until tender for about 10 minutes.
  3. Add ground beef and pork and cook until evenly browned.
  4. Add milk and nutmeg. Simmer until liquid reduces, about 10 minutes
  5. Add wine and reduce for about 15 mins more
  6. Add tomatoes. Gently simmer until sauce thickens, stirring occasionally. Season with salt and pepper.
  7. Add to freshly cooked pasta and top with parmesan.
