Orange Pasta with Roasted Black Sesame Seeds Tofu

Healthy doesn’t always mean bland food. If only you know how to play your cards right, the possibilities in creating a healthy and delicious dish are endless. For this recipe, we were able to produce a dish that presents classic Asian flavors and Italian staple, pasta.

 

Orange Pasta with Roasted Black Sesame Seeds Tofu

Makes 6-8 servings

 

½ pack Hard tofu, cubed

4 Tbsps olive oil

1 tsp Orange zest

3 Tbsps Black sesame seeds

  • Salt and black pepper, to season

350g Farfalle pasta (cooked according to package instructions)

¾ cup Freshly squeezed orange juice

1 stalk Spring onions, chopped

¼ cup Chopped fresh dill

⅛ cup Chopped flat-leaf parsley

1 Cucumber, diced (optional)

1 Small red onion, diced

 

  1. Place tofu in a baking dish then drizzle with two tablespoons olive oil and roll in orange zest and black sesame seeds. Season with salt and black pepper. Bake in the oven at 275°F for 30-45 minutes or until golden brown.
  2. Meanwhile, whisk together the rest of the olive oil and orange juice then season with salt and black pepper. Pour over ½ cup of the dressing to the pasta and toss to coat evenly.
  3. Add roasted tofu, spring onions, dill, parsley, cucumber (if using), and red onions to the pasta then toss well. Add more dressing, if desired. Set aside for at least an hour to allow the flavors to blend. Serve warm.
