A Fine Fillet: Baked Fish With Creamy Oyster-Garlic Sauce

The great thing about fish fillets is that you can do so many things to it. You can bake it, poach it, fry it, or steam it. You can even try dressing it up with light marinade or thick sauce. Here we marry the goodness of mayonnaise and the savoriness of oyster sauce. The result is a fine fillet the family will enjoy.




Makes 4-5 servings


2 pcs White fish fillet (cream dory or tilapia)

  • Salt and ground white pepper

½ cup Mayonnaise

2 Tbsps Oyster sauce

½ Tbsp Minced fresh garlic

1 Tbsp Chopped spring onions

¼ cup Fine breadcrumbs

¼ cup Grated parmesan cheese


  1. Thaw fish fillet and rinse with water. Pat dry with paper towels. Season fish lightly with salt and ground white pepper on both sides.
  2. In a small bowl, combine mayonnaise, oyster sauce, garlic, and spring onions and mix well. Spread this mixture on top of the fish.
  3. Preheat oven to 375˚F. Sprinkle breadcrumbs and then parmesan cheese over the fish. Bake for 15 minutes. Serve with lemon wedges.
