Olive Tapenade

Olive Tapenade
Serves: 3-4
 
Ingredients
  • 1 cup pitted green olives
  • 1 cup pitted black olives
  • 5 anchovy fillets
  • 4 tbsps lemon juice
  • 3 tbsps capers
  • ¼ cup olive oil
  • 3 cloves garlic
  • 4 tbsps dijon mustard
  • 2 tsps fresh thyme
  • 1 tsp fresh parsley
  • Black pepper to taste
Procedure
  1. Put all ingredients in a food processor or blender. Purée until smooth.
  2. Transfer the tapenade to a container and set aside until needed. Cover and refrigerate until ready to use
